Sweet Potato Chili
When it gets chilly, I crave chili...do you? I'm not a huge fan of beans. Also not a huge fan of spicy chili...BUT if you want a delicious, sweet, and healthy option this recipe is for you. Enjoy!

Ingredients:
1 lb. ground turkey or lean ground beef
1 medium onion, chopped
5 stalks celery, chopped
2 cloves garlic, minced
3 medium sweet potatoes, partially cooked and cubed
1 (15 oz) cans diced tomatoes
1 (8 oz) can tomato sauce
1 Tbsp. honey
2 Tbsp. apple cider vinegar
2 Tbsp. chili powder (or more if you prefer)
1 tsp. ground cumin
1 tsp. salt (or more if you prefer)
In a skillet, cook the ground turkey or beef until browned. Add in chopped onions, celery, and garlic. Sauté for five minutes. Set meat mixture aside.
In a large pot, add meat mixture. Add remaining ingredients. Stir in sweet potatoes. Bring to a boil and then let simmer for 30 minutes stirring occasionally. Serve with a side of corn bread for some extra yumminess!
